Templates problem

Can someone tell me how to edit a template please? My items all have same customization categories ez colour, size etc and I have already created a template for these, but I am finding a difficulty to edit the list as I need to add more colours variety for all my items, anyone can to help please? hope I managed to explain my problem well Thank you
