how to change the despatch time from next day
Some time ago amazon set the account to next-day despatch but how can I change it back to 2 days? I hate this next-day shipping because I didn't have internet at home for several weeks before Christmas & had to go elsewhere to log in. I went to the shipping settings on Seller Central but there are no adjustments. This is annoying because I sometimes have buyers who change their mind & cancel before I send orders out.

You can amend Handling Time here.
Note, sometimes, the handling time is set at SKU level - so you may need to check there are no overrides via Manage Inventory.

You can set the handling time for each product in a product upload spreadsheet using the attribute handling-time
