Cancelling an offensive personalised order
I've had an order today for a personalised item with the phrase: I AM AGAINST LGBT!.
I have cancelled the order as this isn't something I am willing to print. Additionally it doesn't seem to fit with the offensive and controversial items policy as I wouldn't be able to list a product with this message and so therefore, I wouldn't be able to print this message on a personalised item.
Is there any point in me trying to contact Amazon to let them know about this order and protect myself from any negative feedback etc from the buyer?

You can report them, but it won't protect you from negative feedback or the like. If you're trying to have negative feedback removed at a later date, it's probably better to have something on the record that you can refer to. In that scenario, you might be better off with a seller support case open about it.
Whether you decide to report them or not, I think you should open a case with seller support explaining the situation and getting them to repeat the offensive items policy back to you. That way you can use the case ID to show why the order was cancelled, at a later date.

I would contact the buyer, and state it`s not something you are happy to print. It`s against your polices (and it may be illegal).
By all means speak to AZ, but it may be pointless. However, I admire your principles.
