Using Royal Mail click and drop but still currently unable to create a label for something that isn’t going that day. Does anyone know how to make a label for a future date? I’ve tried changing the date when making the label but it just disappears.

If you haven’t requested the ability to use a ‘future date’ then you won’t have it automatically. Once you have requested this feature then you get an additional box to complete when you ‘apply postage’ that says ‘planned despatch date’. You just enter the date you want to actually take the items to the post office and then print all your labels in advance.
