That is a very good question! I doubt you'd get anywhere with seller support - I imagine the answer is amazon can do what they want as its their site.
Your complaint would have to be outside amazon - I would look up anti competitive activity on the government website - this would probably fall under abusing a dominant position.

My favourite bit is the notes if you hover over the Min Order Quantity field
"Offers listed under the “Other sellers on Amazon” section of the product page may have no minimum order quantities."

Please be informed that Beginning October 5, 2023, the minimum order quantity feature will no longer be available for our selling Partners. This change will apply to any new listings that you create and existing listings that are already using minimum order quantity.
As per the screenshot that you provide, this is not Selling Partner listing it is sold by Amazon Vendor team.
