Does deleting SKU delete ASIN as well
If I use “Delete product and listing”, will it delete the ASIN as well? I just want to delete the SKU and not affect the ASIN.

No, the ASIN will remain.
Once an ASIN is created is stays in the Amazon catalog, even when there are no sellers selling. You can then add another listing onto the ASIN infuture with a different or even the same SKU.
