It's pretty simple. Set your store on vacation on this page:
sellercentral.amazon.ca/global-dashboard
and then switch back to active when you are ready to sell again.

However, with Amazon you are never truly on vacation. You will still need to respond to any messages within 24 hours or it will be a negative towards your account performance.
