Im trying to ungate brands, but it looks like all the ones I was planning to ungate are now not accepting applications. Do you all know which categories I could apply for today? How often does this change?

You really need to take a few weeks and watch the Amazon Seller University Videos. All the answers are in the videos. Amazon does not provide sympathy or exceptions for new sellers or anyone to make a mistake.
You cannot just pick a BRANDED product to sell on Amazon without being legally authorized as a distributor with a letter of authorization in hand for that BRAND that authorizes YOU to sell on Amazon.
Everyone confuses being UNGATED by Amazon with being legally authorized to sell BRANDED products on Amazon. YOU STILL NEED BRAND APPROVAL!

It's not necessarily the categories that you want to sell in, but the brands you are trying to sell. You may find this post created by @Glenn_Amazon around approval excellence, where he provides you with information that will help you know what is needed for approval.
If you have a relationship with the brand directly, you can ask them to add you as an authorized reseller in their Brand Registry, which will give you approval to sell their items.
