We have shipped our product to the Amazon depot (which has been received). What happens next please? Do we have to activate something to change the status from 'inbound' to 'selling'?

No, you do nothing. It will be available for purchase when Amazon are ready.

Hopefully your seller account was fully verified before you sent your goods in to the warehouse ?
