I changed my legal business name in 2021. I Even got it trademarked, but Amazon won't change my products or assign my products to this new brand name. What should I do? I can't launch my new storefront because of this issue too.

Properly close your actual seller account, wait two weeks, take a new email address and create a new seller account with your new business name.

Amazon will not change your products or assign your products to this new brand name. You have to create new listings with this new brand name that you trademarked.
Unfortunately, there is no way around this. If you changed your brand name, Amazon considers this as rebranding and will ask you to make new listings with the new brand name. You will lose all reviews in previous listings.

If your items were created as a generic listing, then you will need to create new listings for the items under the brand name.
This can be changed in the Account Info area. BUT BEWARE ... changing it will require new verification so be sure that you have all of the supporting documents ready to support the verification process.
Has the trademark become registered or is it still in the pending status? Is the trademark business name in Amazon Brand Registry? Is the trademark business name the brand name shown on the product and/or product packaging? Does the trademark business name have ownership over the GS1 UPC codes associated with the items?
