Handling time is set at the SKU but orders are not honoring my handling time

Handling time is set at the SKU but orders are not honoring my handling time

I have several SKU"s that are set for 3 day handling time yet my orders are coming in to ship the next day. I am handmade and this is not always possible. Example ASIN B01GWJ9V9I set for 3 days and this morning I get a order and it has to be shipped by tomorrow. Sellers support is not helping either.
