Is there anyway to only have USPS and UPS as shipping options?

I am having a terrible time getting Prime shipping templates set up. So, while I offer free shipping on all of my products, only a couple product lines are set for Prime shipping.

I have only USPS Priority and UPS ground selected as preferred carriers, but Amazon keeps throwing me orders that only have DHS or have incredibly high priced Fedex options. Neither are do-able or even remotely practical. Is there anyway to set it so Amazon does not even consider those options while calculating the time they quote to the customer?

Second, this is probably going to sound ignorant, but is it possible to set a mandatory in-house handling time on Prime items? All of my items are personalized and I need a buffer in case the customer isn't clear on their instructions and I have to email back and forth.

PS. Does anyone have an actual zone map for USPS to calculate time for Priority Mail? I am shipping from Middle TN, and I cannot seem to find a map that shows zone 1, zone 2, zone 3, etc. with the number of days it will take to deliver when package originates from 37055.

At this time it's not possible to block carrier options as you described.

You can modify handling time at the SKU level, to account for the buffer you described. The steps to adjust your handling time can be found here.
