Selling in USA only
Is there a way for me to disable my Mexico and Canada stores? I'm only interested in selling to USA, thanks.

No, but there is no need to. Just simply don't use those stores and sell in the USA only.

Put both .mx and .ca on vacation. That will prevent any sales there.
You will also probably want to go into those accounts and delete any listings on those marketplaces; otherwise, your professional fees will be split among all the marketplaces with listings, even if they are on vacation. (note that Amazon will, from time to time, randomly decide, without permission or notification, to put some of your .com listings on the other marketplaces, so if you see billing from .ca or .mx, you'll need to go back and delete the new listings).
Important part, though, is Vacation Mode.

In addition to deleting all listings on those other two platforms (delete any active or inactive listings) and putting them on vacation -- make sure you have disabled synchronization (BIL) so new listings are not added.
And -- as PIcks_by_Nisha points out, you also have to do regular checks to make sure Amazon has not sabotaged you.
