New Royal Mail Customs Slips - no tracking?
The 'old' customs slips (I still have a few left) included a barcode and a tracking reference, like 'AB012345678GB' which did actually seems to get scanned on delivery, so I could at least offer tracking. this made it really easy to do all my picking and packing at home and update the sale details with the tracking info, before dropping all the items at my local Post Office for 'drop & go' (I pre-pay, they do all the weighing and shipping).
I have just picked up a roll of new-style customs slips, that I have to fill in UPPER CASE and don't have any tracking barcode/reference.
Any idea what options I have?

If you mean the CN22 forms I don't think I have ever had any with tracking barcodes.
The new CN22 came out in January 2021 and should be the only one that is used, according to Royal Mail
So if you want international tracking you will have to buy a tracked service
