GPSR what exactly do I need to do?

is there a company that can provide a responsible person?

and what will happen to the products that I have already in stock in Amazon warehouse that doesn't have the new required labeling

If you are selling on Amazon UK and not despatching to the EU then you do not need to worry about GPSR as it is not relevant.

If you are selling on Amazon UK and despatching to EU countries via Amazon UK this is more of a grey area. Amazon haven't issued any good guidance on this yet.

If you are selling on other Amazon European sites then GPSR is applicable.

It is unlikely that Amazon will actually check the stock already held. EU rules allow for stock produced prior to the enforcement of the rules not to be labelled. As long as your listings are compliant with pictures and RP details you should be okay. Although now is a good time to start winding down your current stock and replacing it with correctly labelled stock.
